Yummy, Yummy, Yummy Tasting Cupcakes

We love to make Los Angelinos happy with our yummy cupcakes!

The cupcakes were a great hit!!  Everyone loved them!  Even the banana ones that fell over – they used spoons to scoop up the icing and put it back on the cupcakes so you know they must have loved them!  I definitely will be making this a monthly affair so please put us down for the Monthly Birthday Club.  I know you have a lot of flavors and variations that the cupcakes can be decorated so that is one thing I’d like to discuss for next months birthdays.

Again, thank you so much for the lovely display, the speedy delivery and the yummy, yummy, yummy tasting cupcakes!  I have to place an order for myself soon just to take home!

Mango Chipotle Chicken Bites

Ingredients:

• 2 cups mango (peeled the mango, cut around seed)
• 2 chipotle peppers
• 2 tbsp adobo sauce
• 1 cup cilantro (fresh, use whole)
• 2 tbsp rice wine vinegar
• 3 tbsp lemon juice (freshly squeezed)
• 5 cloves garlic
• 2 tbsp oil
• 3 tsp kosher salt
• 1 tsp black pepper
• 2 lbs chicken breast (cut up)

Directions:

1. Cover chipotle peppers in adobo sauce
2. Combine mango, chipotle peppers, cilantro, rice wine vinegar, lemon juice, garlic, oil, and salt and pepper. Chop in a food processor
3. Pour 1/2 of the pureed mango/chipotle mixture over the Chicken pieces and mix with your to smoothe the sauce onto the chicken with your hands
4.  Put chicken in a bow and put in fridge for 6 hours.
5. Put remaining half of mango & chipotle mixture into pan and simmer over low heat for about 15 minutes. Stir frequently and let sauce get thick.
6. Grill or broil chicken until done
7. Put chicken on a skewer
8. Place some sauce into  a bowl for dipping
9. Garnish with chopped green onion and fresh cilantro
